Homemade Broccoli-Potato Cheesy Soup 🍋

If you're looking for a rich, cheesy, comforting soup to make, I've got you covered!  This soup pairs great with a piece of toasty garlic bread and a glass of white wine!  White wine? You wouldn't think to pair a wine with a bowl of soup, but this soup, in fact, has a secret ingredient that would make the combination out of this world.  If you've guessed that white wine is the secret ingredient,  then you are right!  Let's go ahead and get into the recipe!  As always,  let me know if you give this a try! 

🍋 Broccoli-Potato Cheesy Soup 🍋
Ingredients:
4T of butter, sliced
1 onion,  chopped
1-2 T minced garlic
2/3 c white wine 
1/4 c flour
4 c chicken broth
2 cups potatoes, peeled & diced
2 cups broccoli florets, roughly chopped
2 cups shredded cheese (i used 1 cup, sharp white cheddar,  and 1 cup sharp cheddar)
Salt, Pepper, and any other spices you would like to add.
1/2 c milk or cream

Directions:
1. In a heavy soup pot or Dutch oven, melt the butter.  Add your chopped onions and minced garlic.  Cook for about 3-4 mins, until onion is translucent.   
2. Add the white wine.  Cook until most of the wine has cooked down.  Gradually stir in your flour.  (This will immediately thicken the onion mixture and that's okay!  Thats what we want!)  
3. Add the chicken broth and potatoes.  Bring to a boil, stir occasionally.   Once the potatoes have boiled for about 8 minutes,  add the broccoli,  salt, pepper,  and spices.  Boil for 5 minutes. Cover, lower the heat,  and simmer for 20-30 minutes,  stirring occasionally.   
4. Add the shredded cheese and milk.  Let the cheese melt.  
5.  Your soup should be "chowder" consistency and cheesy bubbly goodness!  

*serve with crusty baked bread or biscuits! 
**you can easily double this recipe and freeze for a later date.
