Boys, Pumpkins, and Chicken Pot Pie 🥧 🎃🍁

Yesterday,  we took our three boys to the pumpkin farm for some Fall fun!!  In which it was fun until it started raining and everyone grabbed their pumpkins and made a beeline for the checkout.   

We spent some time petting the goats, pigs, and chickens at the petting zoo exhibit,  walked through a kid friendly haunted house, made a scarecrow, climbed through underground tunnels, climbed on tractor tires,  pony rides, corn maze, a hay ride, and found the perfect pumpkins for our front porch. (To be carved later...)  The boys loved getting dirty and we didn't mind.  Boys will be boys!  


Early yesterday morning I threw 4 pounds of chicken breasts in the crockpot with some vegetable broth, chicken stock,  salt, pepper,  natures seasonings,  and a few other spices and seasonings.   Letting it cook all day and coming home to an awesome smelling house made me immediately want to make a comforting casserole.   I took the chicken out to shred and strained the broth and realized I had enough chicken to make Homemade Cheesy Chicken Pot Pie, soup for the freezer, and some more cooked chicken to freeze for Buffalo Chicken Dip later in the week!  When I made the pot pie, I made an egg wash for the first time and you know, I will never make it without it again!  It made my biscuit topping so crispy, flakey,  and so yummy!  It was a great compliment to my casserole! 

Here's my recipe for it! 

Homemade Cheesy Chicken Pot Pie 

1-2 lbs cooked chicken, shredded (or cubed is fine)
1 cup chicken broth
1 can cheddar cheese soup
1 can cream of chicken soup
1 bag of steamed mixed vegetables (peas, carrots, corn,  green beans) 
1 can of grands flaky biscuits
2 cups shredded cheddar cheese 

(For egg wash)
1 egg
1 Tablespoon water

1. Add your cooked chicken, soups, veggies, and seasonings of your choice to a large bowl.  Mix together and spread into a greased casserole dish. 


2. Add the shredded cheddar cheese to the top.


3. Separate biscuits and arrange on top of the casserole. 


4.  Make the egg wash by beating the egg and water together.  Use a pastry brush to brush it over the top of your biscuits.  (I added some extra seasoning to the top after this step to give it a little more flavor!)

5. Bake in 350° oven, uncovered,  for 15-20 mins or until biscuits are browned.  


6.  Enjoy!!  Serve with a cup of coffee or hot chocolate for the kids to give this comforting casserole an extra dose of love!  Then, snuggle your babies and watch a family favorite movie!  Below I'm sharing some of our favorite family movies!
